My vote is Steve.
I already have a boot of him covering Infinity's "Opened the Door" and he does a good job with it. I think he'd likewise be capable of doing "Winds of March" proud.
My ABSOLUTE favorite as well NiG!!!! Wheel in the Sky IS great live, but it wouldn't destroy me if they dropped it.
