These guys are pro musicians all on top of their craft. Deen can certainly hold down any tempo consistently. It's all about syncing it up to the backing vocals as steve has pointed out. At least for Journey. They were a much looser band back in the day.
Now, take another famous live click user, The Eagles, and their use of one comes from the intense desire to have everything sound just like the album. Even back in the day they were noted (and sometimes slammed) for it.
I'd rather hear these guys play like they're sittin around jammin. They're all good enough to sound great shooting from the hip.
