Good on you for going the 'hard' route instead of the 'quick fix' surgical route! My favourite fish recipe is right here:

Fried fish - low fat but perfect crunchy coating

1/2 kg fillets of fish (I last used bream) - cut into smaller pieces if too big
1 lime or small lemon - the zest and the juice
1 cup of plain flour
pepper and salt to taste, approx 1/2 tsp each
1 tsp ground cumin

Season the flour with the pepper, salt and the lemon or lime zest. In a bowl, layer the fillets of fish, pouring a little juice and sprinkling a little cumin over each fillet as you put it in. Let the fillets stand in the juice for 5 or so minutes, turning them every so often so as to be completely covered in the juice and cumin. Put the seasoned flour one one plate, spread out, and have a second, clean plate waiting. Taking the fillets from the bottom of the bowl, quickly place a fillet on the seasoned flour, flip it over, press lightly down, then flip over again and press into the flour twice more (so each side is in the flour twice.) Don't shake off the excess flour, but stack the fillet on the clean plate. When all the fillets have been floured, turn the stack upside down, and starting from the first fillet, re-flour them again once on each side. Cover and place in the fridge for at least 15 minutes (can be up to 24 hours)
In a frying pan, put in enough oil to well cover the base of the pan, to a depth of one or two millimetres. Heat the oil and then place the fillets in to fry. Turn the fillets every 2 minutes, until brown and crispy on both sides.

Note - for a really crispy coating, you do need to be generous with the lemon/lime juice so the fillets are very wet initially, they do need to stand for a while once coated (so the coating doesn't come off when cooking) and although you don't need much, the oil does need to be hot when you start cooking.

This gives the BEST crunchy coating for fish I've ever had - certainly better than any deep fried fish.

If you like scallops, you could try COQUILLES ST. JACQUES - they're awesome. Sushi is a great alternative for fish too, preferably the sashimi sort. The maki bits can be pretty fattening. Stay away from the tempura.

And remember; you got to enjoy your food. Sit down and chill with it. Nothing worse than people that rush their lunch/dinner. Dinner down here (starts late, 9-ish) can usually last 3-4 hours. Don't overeat.

BB.................I got tickled at this............I am picturing a fish with a beret, some glasses, sitting at a french restaraunt out doors with a glass of wine in his fin, and baggets on the table. LOL! Now you have me wanting to draw that! :wink: :lol:

I know I can, one of my daughter's friend saw my status on FB and she asked me to walk with her too. One of the teacher friends I have is going to kick start my butt while at school...........teacher's lounge is full of no-nos.

I could use to loose a labradoodle myself. LOL! But right now I am stuck with 3 fat cats. Too bad I could not take Dixie for a walk......she would attack all the other walkers............Psycho kitty! :shock: :shock:

my stuffed flounder recipe is low in fat. The fancy shmancy recipes are good for a change, but Linda's quick, yet
tasty, recipe is more my bag ...less time in the kitchen, cooking ...with an oven!! :wink:

Thanks girl. I am just glad to know I can make things better without the knife. I was so afraid that was what he was going to suggest. My doc is cool, he knows me very well, and he loves to do things old school...........take care of yourself and your health will follow. Good advice to all.

I am anxious to try most of these soon. I could use some chicken recipies too, after the two weeks chicken will taste like fillet minnon! :shock: :shock: :wink: :lol:

Oh, I'm sure you could. The smoker I'm talking about though is a $30-$40 indoor device you use on your stovetop -- the smoking "chips" are actually about sawdust consistency, and you put a small amount in the bottom. Amazingly the smoke doesn't escape during or after the process, but the aroma does! Very easy cleanup, too. :) The salmon takes about 20-25 min. to cook. Probably some of the best tasting fish I've ever eaten using the Steelhead Trout in that smoker. It's also a red fish that looks and tastes like salmon, but more tender and sweet. Cheaper too, I think. I found an article about it:

Ginger, I don't understand the relentless problem with your back. Ever heard of Percocet? Pop 3-4 of those bad boys along with 2 Soma's and you're golden for 5 hours. Repeat three times a day, and problem solved. Then you won't have to eat so much fucking fish you feel like Long John Silver. :twisted:

I would like to be aware of my surroundings for part of my life Deano! LOL! Right now I have pain killers and muscle relaxers but I don't want to be dependent on them. If I don't take care of myself surgery will be my only option. Besides, if I don't get better I might have to move to France and learn to spell Bag U ette and Fil et Mig non. :wink: :lol: :lol: :lol: :twisted:

Stevo he means well.................Deano the fish is only for two weeks. Trust me I will be quite sick of it by then! I may be skinnier but become part mermaid in the deal! :lol: :lol:

You Americans can't pronounce for shit - it's actually spelled exactly how it's pronounced. It can be Italian, German, Spanish, French, whatever. You'll always hear when it's one of you guys pronouncing it. Bonnchjuuur monsieeeeuurrrr; voooooozz parrrlezzzz englaizz? Che seeeez Amerryycann. Vooozz aveeeiz McDonalds?


And seriously, Ginger, try to eat scallops, oysters and even sushi. Healthy and real tasty. Just don't fry it or overcook it - like fish, shellfish is supposed to be more on the raw side. Enjoy the food; never rush it.
