A very passive thread about coffee.

EDIT: There's an old 70's or 80's movie name Network where the main actor screams the movie's famous line, "I'M MAD AS HELL & I'M NOT GONNA TAKE IT ANYMORE!!!" I thought that line was funny & so I originally used it for the title of this thread; however, it appears as if someone felt like I was yelling at everyone & so I've edited the title to the above more politically correct title. Since Parfait has already quoted my original post, I thought it would also be kinda fun for me to edit my original post to this more passive & politically correct post, so here goes:

I'm a little concerned about the taste of the coffee I'm able to brew. I LOVE coffee but I don't know how to make it. (Feel sorry for me.) I grind my own beans, ........ I try to follow the instructions on the coffee bag, measuring as precisely as my inexperienced naive mind is able to comprehend, :( ..... I try to clean my coffee pot regularly, ...... I try to use bottled water for purity's sake, ...... & still my coffee taste inadequate. When I go to a nice upscale restaurant & order coffee it always tastes DEE--lish, so why can't I recreate that DEE--lish taste at home?

If you would be so kind.... may I ask ..... if it isn't too much of a bother ..... does anyone here know how to make a really good cup of coffee? Mine always taste bitter or burned or weak or like brown water. Do I hafta purchase a special coffee maker? If so, would you be so kind as to share that information with me? If not, I can wait for another day. That is entirely up to you. Please note that I am not at all concerned with the cost of my investment b/c I would consider it a worthwhile investment passed along by the knowledgable & helpful members of this wonderful website. Thank you very much for all that you have done for me & for your love, patience & consideration in this most difficult time for me.

Hugs & Kisses,
Caffeine Kid

Buy a coffee press. That's when you'll get quality coffee.

I usually make something like this: 50 mL coffee, ice cubes, two scoops of protein powder and around 0,2 L soy milk, and you got yourself a healthy, low fat, high protein drink.

Bitter taste can come from using too much coffee (the same is true for tea). You mentioned you are cleaning your pot, so that's good because a dirty pot, basket or mesh filter can also result in a bitter taste.

Best advice I can give is:

1) Use a good coffeemaker -- doesn't have to be expensive, but brews a consistent result.

2) Use good coffee of course, and try several brands.

3) Use correct measurements for sure.

4) Clean or decalcify the pot as necessary.

The coffeemaker I used for over 13 years was a KRUPS that was one of the last ones actually made in Germany before they started manufacturing them in other countries. It finally gave up the ghost a year ago, and I replaced it with a Cuisinart that does just as well. But believe it or not, I've switched mainly to using a single-cup-at-a-time KEURIG system and you cannot fail -- quick, easy, no more waste, and a perfect cup every time. :)

You can also try putting a pinch of salt in with the coffee it seems to help with the bitterness. I do it everytime i make coffee and it turns out very good.

Quality of your coffee also makes a huge difference. I personally hate double roasted coffee, because it's always too bitter and tastes burnt to me. But double roast is easier for the coffee producer to make; you can use lower quality beans and get the same result, and it doesn't take as much skill to do as single roast.

For my tastes (and bear in mind, I drink coffee German style, not Italian style) the coffee needs to be single roast, and you need to find a decent supplier. I'm blessed with 8 different coffee specialty shops within easy distance of my house, so for me it's easy. If you don't have a specialty place it can be harder. Basically, if you can find such a place, talk to them. Explain your taste in coffee and ask their advice. A decent place will let you try the different roasts and styles.

I find using filtered water makes the coffee slightly bland; coffee actually tastes better made with hard water rather than soft. If you are worried about the water quality coming out of your tap, just fill a jug and let it stand for an hour. Any chlorine in the water will diffuse off, and any particulates will settle on the bottom.

How you are making the coffee can also have an effect; plunger tastes different to dripolator (which I hate) tastes different to brewed tastes different to percolated tastes different to espresso. Bottom line is, find a place that makes coffee you like, and ask - what do they use and how do they make it?

Good luck - decent coffee is worth chasing.

Wallingford is the answer. At one time it was only sold to fine restaurants, but maybe it is now sold in stores in the same brew and quality . It was mild, but flavorful 100% perfect if you like coffee w/o sugar, milk or other coffee add on items.

Coffee press will work nicely for home use... my brother in law wants one of those super expensive brewers like coffee shops use - the problem is you have a longer brew time on the regular home coffee makers and that isn't how it's supposed to be brewed, that's why it never tastes the same ("as good") at home as it does when you go out. The type of beans and the grind matter too. But I feel your pain, Jason... I'm picky with coffee too. I LOVE buying gourmet/specialty coffee but I hate the idea of putting it in a home coffee maker. It seems like such a waste.

This is making me crave my favorite coffee ever... I think I still have some around here - "Bananas Foster" flavored coffee from a teeny little specialty shop in the French Quarter.... I picked it up a few years ago and the next time I knew someone who was going to Nola, I begged them to bring me more of it!!

if it's the acidic bitterness you don't like, try cold brewing by immersing the ground coffee in cold water overnight. i find it smoother in taste & easier on the stomach.

It's a little shop that's pretty close to Cafe du Monde. I cannot remember the name of it... it's a small chocolate/pralines shop - they make all their own stuff... and they have a great selection of flavored/gourmet coffees.

I've found the best coffee is always at those "hole in the wall" type diners. Not long ago I had one of those "man, this coffee is good!" - I was surprised since it was an ice cream/soda shop (but, I think they did grind the beans since it took a long time).
I don't like flavored or any cream/sugar...just plain piping hot (not strong) black coffee. McDonalds always tastes like cigarette ashes were added in - way too strong, same with Starbucks...Jack-in-the-box tastes much better to me. For Christmas I got a stove top percolator (like on I Love Lucy) - of course, it needs more attention - can't just turn it on and go get dressed - but, it is easier to clean than the Mr. coffees I used to have.

I like coffee a bit on the strong side. So, for a 12 cup pot of coffee, I put 6 fairly heaping teaspoons of coffee in the filter basket. I just use plain old store bought pre-ground Folgers. I'm not into designer coffee, just coffee. Cold water is essential, even if it's from the tap. The warmer the water, the more impurities you will have. None of that crap bothers me though, as I like my coffee "regular". Which means cream and sugar.
