In a rock context sax solos have always seemed a bit left-of center to me. A couple that come to mind that are fun are "Shelter Me" by Cinderella and "I Believe In Me" by the Scream.

In jazz, Cannonball Aderley and John Coltrane's excellent playing on "Kind Of Blue" come to mind.
